Duties
As a member of a team of meat processing technicians, a highly motivated individual with previous training in meat processing and experience working in a food production facility is sought. This junior position reports to the Abattoir Supervisor and performs slaughter and fabrication of multiple meat animal species in a federally inspected facility, while following prescribed research protocols for multiple scientists. The successful candidate must have good manual dexterity and knife skills to keep up to a physically demanding slaughter and fabrication schedule. The candidate will assist researchers and laboratory technicians in the collection of research samples and data. The successful candidate will be responsible for operating programs that support the facility’s Hazard Analysis Critical Control Point (HACCP) system and perform necessary HACCP duties required for federal plant status. These include but are not limited to participation in plant equipment maintenance and sanitation, development and enforcement of good manufacturing practices and development of standard operating procedures, and delivery of carcass and meat products to various locations in Alberta through operation of a refrigerated commercial truck.
